Hands-on education remains one of the defining strengths of Iowa State University's Meat Science Program.

Through the Meats Laboratory, students move beyond textbooks to gain practical experience evaluating beef, pork, lamb, and poultry while learning how carcass quality influences meat value and consumer purchasing decisions.

Courses such as Foods of Animal Origin teach students how to grade carcasses, identify retail cuts, understand fabrication techniques, and evaluate meat quality using industry-recognized standards.

Working directly in the processing laboratory enables students to connect scientific principles with real-world applications in meat processing, quality assurance, and food production.

This experiential approach prepares graduates with practical skills valued across the meat industry while helping future professionals better understand meat quality, processing, and consumer expectations.
